February 2024: FLEX FUEL FRIDAY PLUS Fridge and Freeze Favorites



Our Flex Fuel recipe for the month of February is Caramelized Onion Quiche, It's basically eggs pie and I love egg pie. 


I was once in a Christian Book Club, which met weekly and the facilitator introduced me to the joys of Caramelized Onion Quiche. We met on Saturday mornings for three years and this experience ranks toward the top of this my one life, as some of the sweetest Jesus filled years. 



But this post is supposed to be about Quiche. 


We all, already know eggs and cheese are both a great source of protein (fuel) and couple that with the small amount of carbs the crust contains and Flex Fuel is what we have in the form of an egg pie.


After much searching, I settled on using the recipe from Simply Recipes. I used two percent milk instead of whole milk and I'm not sure if I would know the difference, since this was my first time tackling the making of  this particular egg pie.


I prepared and froze the Caramelized Onions on Monday per the directions I recently discovered on McCormick's website.




Since, I made two pies, I froze, large southern style slices on a parchment lined cookie sheet before placing each slice into individual freezer bags in a Meal Prep type fashion.





Another, Fridge and Freeze Favorite is almost everyone's favorite: Spaghetti!
